Not sure if anyone has tried the Spot breed of pigs, they are tasty! This is one that I raised and processed recently.
I cut a smaller shoulder roast... about 5lbs. Injected it with an apple brown sugar soy mix.
dusted with a pork rub sent to me from a smoking friend in Jamaica
fried some of my canned green tomatoes from the garden last fall...
The smoked spot, fried green tomatoes, biscuit and salad...
I loved the bark and the pork was tender and moist...
The spots are a good breed... but then most homegrown pork is tasty when you have control over what they eat and how they are treated.
