Good day from Wyoming. I am going sheep hunting in two weeks and I am going to smoke up some brisket, pork chops and whatever else sounds good. We are going to be in the back country for 10 days or so. Since we are going to be horse back without coolers or ice, will the smoked meat last for a while? Like most of you, the meat I smoke usually only last about 15 minutes unless I can hide it. Thanks for any help

Brisket and chops and the like, meats that you cook while smoking will need refidgeration in order to stay safe to eat. Smoking for preservation usually also involves dehydrating, like jerky.

What chaz said! Jerkey meats will keep for quit a while without refrigeration! Smoked brisket, chops, sausages etc will spoil quickly in the heat of summer without refrigeration. Food poisoning is not something you'd want to deal with in the back country .
