I use different flavors for different foods. Experiment and try different combos.

Beef - Oak, Mesquite, Hickory, Wine-soaked Oak, Black walnut
Pork - Hickory, Oak, Maple, apple
etc...

Our favorite and that everyone likes is Oak. Great smoke and not overpowering at all and goes great with any food.

i am loving the oak pellets. i also like pecan / cherry pellets. heh, by the way. welcome to the forum dude.

Welcome aboard, one of the great things about pellet cooking is how easy it is to experiment. I'm with Tanya, oak is a great all around wood that goes with everything.

My sentiments exactly! It depends on what's in the cooker, and even then I like to change it up. I really enjoy the subtle differences in smoke flavor.

Welcome from North Carolina. I can't add much to all the advice you have already received. Start with single flavors of pellets and then start mixing flavors. It's all fun and the results might surprise you.
