when you cook w/ charcoal do you every put to much? i do. the drum basket is huge for great long burns. well, what about great little burns. i got this.

i took my weber coal holder apart. bent it here and there and waa laa. 1/2 a coal basket for little burns.

i used this for 4 cooks. it works great. i've gotten 6 - 7 hour burns at 220 -250. on a 1/2 coal basket fill 1/2 way. these drums are so cool. i hardly use any coal and keeps temp like a champ.

ok, enough of that. time for tri dogs.

the key to these drums is use only 15 coals. only 15.

threw down some oak pellets to get some smoky, smoky.

made some M3 marinade to let tri sit in for 4 hours (marinaded 4 hours ago).

How do you like the M3? I have used it on chicken, pork, and a small piece of beef. It is really good, IMHO. I want to start trying it with different balsamic vinegars and possibly different flavored oils. I think the flavored balsamics will work the best.

The next time I use it, I will try some Tantonka dust, too.
