Miserable day outside... 28° and dropping, 30MPH wind gusts, and spitting snow. Let's smoke some meatloaf!
2.5 pounds ground turkey, chopped roasted red/yellow pepper, chopped sweet onion, fresh mushrooms busted up, bread crumbs, 2 eggs (1 eggbeater), glug of EVOO, 1/4 cup of Carolina Treet, some Goya, Lemon Pepper and a few shakes of parsley.
Oh, and about 3 T of Mies to get it nice and sticky.
After 20 minutes in the fridge, form into a 'meat loaf patty' right on a Frogmat. The Bradley rack helps me hoist it on/off the grill.
I need to bring some heat to this one, so it is going in the MiniMAK. (not to mention, I'm curious how it well it runs in the cold/wind)
Setpoint at 370°. Temperature at grate around 360° or so. I'll shut it down when the IT reaches around 165°.
