Just put in my order for the rest of BBQ'rs Delight flavors and I am very excited. So excited my wife and I decided we need to have a party. So, coming up in June will be our first (hopefully annual) Smoke Taste Test Party. Here is the plan:
Smoke a flavor neutral (i.e. bland) food* in all 14 flavors plus some combos to let people "taste" and describe the smoke flavor.
Include cubes of plain pork (probably shoulder), beef (probably brisket), fish (salmon and some white fish), chicken (or turkey), and cheese (probably mozzarella) for people to try different food pairings.
Have evaluation forms for people to fill out as they do their tastings.
Have plenty of beer as a...er....palette cleanser.
What do you think?
*For the flavor neutral food I'm thinking of hard boiled egg whites or tofu. (BTW - ever tried smoked hard boiled eggs? mmmmmmmm! Makes great egg salad.) I'm thinking those are pretty bland and they absorb smoke quickly so I will only have to do 1 20 minute batch for each flavor. Any other suggestions?
