Using Bok Choy

I got a Bountiful Basket this past Sunday and there was an Asian add on pack - in there was Napa Cabbage, Bok Choy, fresh ginger, snow peas, green onions, and a TON more. The Napa Cabbage and the Bok Choy are huge and there is way more than one meals worth there. Can either of those be diced/sliced up and into the freezer in a foodsaver bag? I am wondering how either of those would freeze. I plan on making up a big stir fry dish this weekend but I know I will have lots left.

Any other uses for Bok Choy or Napa Cabbage??

Bok Choy, sliced in half or quarters length-wise, grills up nicely.

Brush with olive oil, sprinkle on some seasoning & grill until just barely tender (about 10 minutes or so). Drizzle on a little vinaigrette, or ranch dressing with some diced tomato & blue cheese - Yum!

I looked into that... I may try. This thing is HUGE so not sure it would be tender like the baby Bok Choy when grilled.
