What did I do wrong

First a little background. I just got a Myron Mixon Pitmaster Q3 pellet smoker. I did the curing process a few days ago according to instruction. Today I did my first smoke and am disappointed. I used cookingpellets.com "perfect mix" pellets. I did St louis style ribs. I did them for 5 hours. I followed the lighting and pre heating process per instructions. Then I set a temp of 250 degrees. When It was preheated the outside gauge said 300 and the digital reading showed 323 alternating between my 250 my setting and what it showed. I only opened the lid ever hour to spray apple juice on the ribs. After 4 hours I did the "flex test" and the meat was separating. I then layed foil on the grill put BBQ sauce on the ribs and took off grill 1 hour later. The ribs had the "smoke ring I have read here. about 1/4 inch red. To me the ribs were not done and wife just said a little longer. Now what I don't understand is since it was my first time I keep a close eye on the temp. It would flucuate between 162 and 450 on the digital readout and the temp on top of the grill but my 250 degree setting was still there. So what did I do wrong

OK, I contacted the company today and they told what I did wrong. There is a grease pan that runs the entire length of the cooking platform and on the left side is a rectangular open slot to put a water pan. I did not put a loaf pan in it as I was going to spritz the ribs. They said the loaf pan has to be in place or it creates and funnel effect and can not maintain proper temp. I don't have to put anything in it if I don't want to but it has to be in place. Hopefully problem solved
