What difference a couple hours makes

So, I am a big believer in the brining method used by Alton Brown for cooking a Boston Butt except I shoot for a 12+ hour soak ( I also do the entire cook on the grill at 225F). The first time I did this it came out with a rich natural flavor that everyone loved.

The second time I did this it was closer to 8 hours and we could tell a MASSIVE difference in flavor. It was just as juicy and but that rich flavor was just not there. So, lesson learned minimum 12 hour soak in the brine is a must for my Boston Butt recipe!!!

I think the key with Alton brown's recipe is the molasses.
