What is the litmus test for different restaurant cuisine?

I'll start...

Mexican Resaurant....Chile Relleno
The batter has to be very light and fluffy....cant be saturated with grease.....the sauce has to not be goopy.....a great one tells me they know how to cook

Italian...THis is a tough one but I said in Debs contest posting last week but Gnocchi is probably mine....They can taste like glue balls or just be these little pillows of flavor...probably basic red sauce too...if they can't make a marinara then you should run.

Mexican:
Carnitas. If they brown cut up pork and call it carnitas, I dont eat there again.

Italian: Def. a basic red sauce - marinara or bolognese.

For me:

Chinese: Egg rolls tell it all. If the egg roll sucks... well, enough said.

Mexican: Enchilada sauce - If it's homemade then they care about ALL of their food being fresh. If it's from a can...

Mexican: If they use the word ""authentic" then there better be someone making tortillas by hand in the front window.

And the chips. Made from scratch, don't taste like last weeks oil.
