What was your best cook?

I'm fairly new to this pellet cook thing and did a turkey breast that was great.

Brined it overnight in Gatorade, brown sugar, salt and honey. Wrapped it with bacon and put in on the grill for about 5 hours (low and slow). It was terrific (even if I do say so myself, the Supreme Commander said so too).

Got me to wondering what others have done that was just one of those, WOW that was good! Doesn't have to be fancy just something that really worked at the time.

My best cook was my first attempt at brisket. I planned, and planned and researched and then found the BP thread on low and slow and what happens when you cook a brisket. It came out great and none of it made it into the freezer for later. Means I'll have to cook another one. But the information available in this forum will give you the confidence to try some thing that stretches your abilities.

The best? I have no idea but everytime I make armadillo eggs the men go crazy. Women like them but the guys ... Oi!

Okay as orginally stated I'm fairly new to all of this so I have to ask.....what the heck are armadillo eggs. I just know there's gotta be a catch to this.... :)

Armadillo eggs are a type of jalapeño popper. They're usually stuffed with some kind of cheese filling them wrapped or topped with sausage. Sometimes they're also wrapped in bacon. They have an egg shape, hence the name.

My first ever prime rib for the family x-mas dinner. I know never practice on your guest but I hit a home run right out the gate.
