This year we had three vacations. I took my wife to New Orleans. Wonderful time. Great food everywhere we ate. I particularly liked the Commander's Palace. The second trip was to France. I was introduced to some of the foods I had only read about or seen prepared on TV. The duck confit inspired me to make my smoked pork belly confit. Our last trip was to Hilton Head. Seafood, seafood, seafood, baby. We ate a lot of seafood. We bought and cooked many pounds of shrimp for four people. I had an amazing seafood gazpacho that was so good that I bouight an extra quart to bring home. I will be making my summer gazpacho recipe and also trying a seafood version. My wife has one more trip planned. She and my daughter-in-law will be attending a needlwwork convention in Philadelphia at the end of August. I have one more trip planned for the first of December, an elk hunting trip to New Mexico.
These are "some" of the things I retired to do. My wife wants to travel more than I do, as far as sightseeing goes. She is already planning a longer trip to Eastern Europe for next year. I want to do a big fishing trip next year instead of a big hunting trip.

I think some of your trips to cook at different places sound kind of like a vacation to me. Lots of good friends and great food. What's not to like?
Have to agree with Art. Our eating tour of NOLA in May was my culinary highlite so far this year. That being said the vittles around the old homestead hav'nt been to shabby!
For my last vacation in March, I took my fiancee to Manhattan. We ate at Le Bernardin twice. I just love Eric Ripert's food. We ate hot dogs at Papaya Dog several times including one time right after seeing The Allman Brothers at The Beacon Theater. We ate at Les Halles for brunch. We had tapas at Casa Mono. We went out to Flushing to eat awesome Chinese food including Peking Duck from a roadside stall, hand-pulled noodles in an amazing food court, a Chinese-Indian cuisine from a particular region in India with a lot of food brought by Chinese immigrants. We ate some Dim Sum in Chinatown. We went to Mario Batali's Eataly for some razor clams, langoustines, and some pasta. We had Philly-style cheesesteaks at the bar down the street from our hotel.
Prior to that, our last trip, which was in June of 2011, included a visit to Saugatuck, MI, where we ate at this great place called Everyday people. I had some magnificent pork belly. She had a great pork chop stuffed with gorgonzola. After a couple of days there, we went to Chicago for a couple of days to attend a wedding. There, we ate at Hot Doug's and got the famous foie gras dog among about 5 or 6 dogs split between us. We waited a couple hours in line for that. Then, we went back and did it again the next day. It was that good! We ate some Filipino food with my aunt and uncle. We ate at Laurent Gras' L2O, which was fantastic seafood. We loved Paul Kahan's The Publican for its great pork and beer. We also enjoyed his Blackbird, but not quite as much as The Publican. I also enjoyed Rick Bayless' lovely Mexican food at Topolobampo/Frontera Grill. After those couple of days in Chicago, I spent a couple of days at the Porsche Sport Driving School in Alabama.
Of course, being of Filipino descent, I love eating in the Philippines. My fiancee wants to go there for our honeymoon, because she has never been there. My mom wants to go to Spain next year, and we may have to join her. I have always wanted to go to Spain. There are so many places we want to go. Europe, Morocco, Vietnam, Thailand, China...There are just too many choices. We're having a tough time deciding what we want to do for our honeymoon. We keep fantasizing about trips we would like to take. For me, those choices are highly driven by food. There are some motorsport-related trips I'd like to take. For instance, I'd like to see the 24 Hours of Le Mans in 2014. We're planning a trip to the Formula 1 United States Grand Prix in Austin in November 2012.
For me, best food overall has been in New York. Sure, I've loved Nawlins. I've loved Chicago. Boston was good too. Had some decent food in the Austin, TX area. Of course, I love California. Still, there so many places to hit in all of those areas. Personally, I just can't get enough of New York.

Went up to Minnesota to fish the upper Mississippi river. Caught some walleye, bass, crappie, perch,catfish,pike and something I don't know what it was..it had razor sharp teeth and was super ugly I can tell you that! Dang thing would watch me when I moved. Never seen a fish do that before lol.

At first I thought it was a Northern Snakehead ( an invasive fish from Asia), but I think it's a Bowfin, which is a prehistoric native fish.
