Yaw I live in Arkansas have a good duck IMO recipe I'll share with ya. As far as deer like the tenderloin fried up but that it. Rest I have made into summer sausage made up by some Mennonite who have meat processing plant near where I live.
Duck :
Breast cut them 3/4 thick strips Mix 1/3 cup Olive oil ... 1/3 cup Soy sauce..... 1/3 cup Teriyaki sauce .....1cup red cooking wine... Option 1tsp lemon pepper. Take the duck breast strips and wrap them in bacon I use a tooth pick too secure bacon too breast. Then marinate in a bowl over night. I put my MAK on smoke mode at smoke till done time will vary based on thickness of breast.
Everybody seems to like the duck when I cook them. And that deer summer sausage I have made is better than snuff and not near as dusty really good I'll post picture of some on this thread I'm picking up a batch tomorrow.
