Could not find a point so I started with a five pound flat. I was nervous they would end up dry and chewy.
They ended up turning out great. Super moist and very tender. I didn't think they were going to be very good so I did not get a picture until they were done.
I was concerned because I kept reading on another forum that you should never use the flat for burnt ends because they will be dry. With it being just me and the wife I didn't want to pull the trigger on a full packer. Add to that my previous shall we say lackluster experience with brisket I was really nervous about how they would turn out. Judging by how fast they were devoured at the party and the amount of compliments we got I would not think twice about using the flat again.
