For the Hasty Bake owners, say you just wanted to bake something like bread at 350. What would be the drill as far as amount of lump, and maintaining temp? The closed hood thing is kind of confusing.

wanna know what it reads when a tape measure is dropped through the bottom cooking grate and hits what the charcoal itself sits on. Don't know what it's called on a HB, coal grate? If the coal grate sits in a coal pan, I just need the distance from the coal grate to the bottom of the cooking grate when the coal pan is set to the highest setting.

With the grease drain in grates are about 3 inches off the top of the charcoal pan

With the grease drain out you can get the charcoal pan 3/4" below the grates

You can get close enough to where the only space between your food and the coals is the grate. Sorry I didn't read your post clearly before I went outside but the charcoal pan in about 3 inches deep so when the grease drain bar is in the bottom of the charcoal pan is 6" below the grates, no grease bar 3 3/4" below. You can put a hell of a sear on with the Hasty Bake

Perfect! Thanks Tom. That's what I was looking for. I have the same coal clearance on my modified kettle but, of course, I can't adjust the coal hight on my kettle during a cook nor do I have more than 2 settings (normal and rocket sear). Getting a HB is looking pretty interesting. I need a buyer for one of my special tobacco pipes and I can have one of them cookers on my back deck!

It might be an optical illusion but is your cooking grate bowing from the heat?

No it slopes to the center and the grease catch bar which is v shaped runs underneath sloping to the left slide of the grill and the grease catch pan.The sloped grates direct drippings to the grease pan.
