Just Bought My First Brisket

Just bought a 11lb brisket, with the point. Have never done a brisket before. I have some questions about timing. I am not sure what time to put the meat on this evening for an overnight cook. I hate to be selfish, but prefer to get about 6-8 hours of sleep before wrapping in foil. Not sure how to accomplish this. I do want to smoke, and figured I would have it set to smoke, with a tube smoker running as well, for 2-3 hours, then have the temp go up to 225. Do you think I could get away with this and head to bed at 11, get up at 6 to wrap, or is this too long? Any ideas, suggestions, thoughts, will be much appreciated.

It is gonna finish much faster than you think. My 15lb brisket took 9.5 hours to reach 190F IT. I did it at 230F on my Memphis. Then bumped it up to 260F when it hit the stall. No foiling, basting, or boating...

NIIICE. Is that a picture of the cook you mentioned? Looks fantastic! How long in did you hit the stall, and what is the temp range for the stall?

My seven pounder took 14 hours. Like muebe said, no foil, no baste, no boat. I did mine at 225 the whole way, did not increase temp to get past the stall......but I was tempted.

That timing should work fine. It's basically the same timing & temp I used my last overnight brisket cook. I went to bed at midnight and was up at 7:00 a.m. to foil, and it turned out great.

That will work. I always start a 12 lb at 6:00am at 180 for a couple of hours then bump it to 225 when it hits 150* wrap it at and take it home. When you stick a probe in it and feels like butter it is done, let rest and enjoy. 9 to 10 hours total time
