Just bought a 11lb brisket, with the point. Have never done a brisket before. I have some questions about timing. I am not sure what time to put the meat on this evening for an overnight cook. I hate to be selfish, but prefer to get about 6-8 hours of sleep before wrapping in foil. Not sure how to accomplish this. I do want to smoke, and figured I would have it set to smoke, with a tube smoker running as well, for 2-3 hours, then have the temp go up to 225. Do you think I could get away with this and head to bed at 11, get up at 6 to wrap, or is this too long? Any ideas, suggestions, thoughts, will be much appreciated.
