Stuffed Bacon Wrapped Shrimp

I found some Alaskan Wild Shrimp on sale at the the store...

First I cut the package of bacon in half and coated them with Super Pig Bacon Rub...

Then I put 4 tablespoons of cream cheese, 1/4 cup imitation crab meat, 1/4 cup of white onion, and a 1/2 teaspoon of minced garlic into my mini food processor. I blended it until smooth...

I shelled and butterflied the shrimp. Then added a spoon full of cream cheese blend. Then topped with Avocado and more imitation crab meat...

Then wrapped with bacon...

Onto the Memphis at 275F for 30 minutes. Then i bumped it up to 300 for 30 minutes. Then 400F for 15 minutes...

They look awesome. Seems like a lot of grill time for shrimp. Were they good?

Yep.. They were not over cooked. I had them on the top shelf(cooler) and the bacon & stuffing insulated the shrimp. They were perfect ;)

I cooked some shrimp last night with just a little "Money" on them. They were good, but no where near yours!! I need to plan more time into another cook and try these. Nice job muebe!!!

WOWZERS does that ever look good, Muebe!

We've love doing bacon wrapped shrimp on the grill, but that stuffing just takes it way beyond what we've ever done.

Do you think this shrimp dish would hold overnight and be great the next day cold? We donated a day of sailing to the benefit auction at the senior center where my wife works and part of the deal is serving lunch. I want to do something awesome, that we can prepare the day before, and then just bring out while we are sailing. It has to be something that doesn't require plates and silverware because that can be a problem on a healing boat. What do you think, will this work? It really looks perfect. The sail is this Sunday so we don't have a lot of time.

Kite they were very good the next day. I had some left over in the fridge the next day and they were darn good cold too ;)
