Better ribs through science?

No more backyard spares for me, they are definitely better through science. Being BBQ'n for awhile, and started competing this year. I think I cook great backyard ribs, but our comp ribs just lack the pop. First go at injecting some SLC spares, wow what a difference in every area. Same rubs, same sauce, same timeline. Moist, tender, and great bite. And plenty of POP! What do you think?

No, we have been doing a simple brine. I like them that way, I just don't think it had enough umph for the judging table.

you said you used a brine before....so do you brine ALL of your ribs? What doe you use for a brine..I'd like to try it sometime. Also, what did you inject into those ribs?
