Crab stuffed Salmon

Been on a fish kick here at the Carter house this past week so today I decided to give stuffed salmon a whirl.

Here we go-

Started with a couple of filets and ran a slit down the center for the stuffing

Made the stuffing with crab meat, parsley, garlic, lemon and salt and pepper

Onto the MAK running at 275 to get a little smokiness

While the salmon is cooking steamed up some artichokes, halved them and hit them with some garlic EVOO and a little Desert Gold. (there should have been four halves but one decided to end it all and jump off the counter)

Crank the MAK to 400 to finish off the Salmon and grill the chokes

This came out great, the salmon needed no extra seasoning and it blended well with the flavor of the crab stuffing. I haven't stuffed fish before but I will be doing more in the future.

Very cool looking meal.

I have wondered about doing artichokes on the grill. Does the stems get tough? Or do you not eat them? I have never had anything more than the artichokes out of a can.... sad but true :eek:

I love this post.. A LOT!!!

BUT, I'm not letting my wife see it. She lived in Alaska part of her childhood and loves both salmon & crab. One look at this and she'll be on her way to your house for supper!

artichokes are the greatest the way carter does them is how I do them steam split clean season adn steam then grill I dont eat the stem

That fish looks great and I need to get some artichokes and give them a shot, never actually had them kinda scared to try time.
