Foil/towl/cooler... WHY?

Questions after reviewing all the old posts. So why do you FTC and for how long? Why not foil let meat finish coming up to temp and then pull? Why cooler for a long time?

Because ccoked meat needs to rest especially big hunks.....also it can give you some flexability in time if you are cooking more than one thing or traveleing
