Matt Dalton, what is your brisket technique?

JD, your brisket looks delicious.
Smoke setting for 2hrs..ramp up to 300(our pit runs about 10 degrees cooler)for another 3hrs..foil tightly until butter tender then let it go for another 20-30 mins..rest for at least a hour up to 4
