Smoked brats in beer,green pepper,onion and garlic.

Apple smoked to a light char then everyone into the pool.

Gotta love smoke rings on brats!
I was surprised of how much green pepper taste came through in the brat with only one pepper.

those look good. how did the beer taste come out in the brats? lol, you just wanted to break out the beer. i know you. ;)

Sparky I didn't taste the beer in the brat I think the habanero took care of that. The beer did keep them very moist though.
Yeah you got me pegged! Any reason to open a beer :D

Next time try a "heavier" tasting beer. Actually, FT tastes really good with smoked brats. I just hate to use it for the brats unless that is all I have.

Holy Sheboygan!

I have some of those in the freezer.... Might be Saturday night's dinner for me. (MrsSTC and MIL are heading to a sweltering Cardinal's game)

I'm sure a heavier beer would have done the trick. I couldn't bring myself to dump three XX's into the pan...them's for drink'n!

Simmering(not boiling-makes them rubbery and tough) in beer before grilling is the traditional German way to cook a brat. German Pils, Vienna or Oktoberfest are great with brats. On my way to pull some of my homemade brats outta da freezer!:D:D

So are you saying they should be boiled? Or that they shouldn't be simmered or boiled?

I think they should be boiled in beer first then grilled. That's the way I understand him. I'll have to try that too!

I boil mine in beer and onions but it is a quick boil. Just as they start to turn grey. Then remove them and simmer the beer and onions till the liquid reduces. The onions then make for a great topping.

Then I hit them with high heat on the grill for a few to finish ;)
