Pulled Pork / Beef ????

I like the burnt ends on pork whenever I have eaten it. Sadly I have only made one attempt at pork but thinking it is time again soon. Question is why not cut it up into much smaller pieces before you smoke it? Is there a reason to leave it whole vs cut up? It breaks down the fat/conective tissue better as a bigger cut or just that is the way it is done and don't mess with it?

It's totally up to you and your preference.


For a while now I've been cutting cut pork shoulders in half for more surface/bark area. I love the results. I don't know if I'd cut it up into much smaller sections for fear of them drying out, but cutting them in half has worked beautifully.

That is an interesting question. I don't have an answer for it, but looking forward to hearing opinions. Might be worth a test.

Cut it to small and risk drying it all out... that would be my reasoning. Burnt ends are great as a treat but the pulled product is even better IMO

Phew, I was thinking this was going to be one of those why would you ask that. Come September I might try the small pieces. Going away for work and no smoky for me. 6weeks away with work (holand)and two more away with the fam (Canada). Be ready for some sparky style ribs when I get back.

I may try the cutting it in half trick as well. sounds interesting and should reduce the cook time.

Where in Holland are you going? I spend a lot of time there also for work. Also lived there for 5 years.

Veldhoven / Eindhoven area. Wife isn't big on traveling or I would have probably spent a year over there. Any suggestions on sites / places to visit.

Hmmm... not an ASMLguy are you?
I would say the typical things that are close are nice to see. ( Brugge, Rhine river area, Kinderdijk, Visit some of the Monks that brew beer for many centuries.) A lot depends on what you like to visit.

Did the big city things last time I was there so looking for the more out of the way things. 6 weeks to get into trouble.
