Nice job. I gotta say I'm feeling a bit intimidated by all the awesome cooking folks are doing in this forum. I'll keep up as best I can.:p

Love it!! Hey my Englander has a nice indirect side and I want to start doing things like this with it. What does the pan of water do, and how often do you need to fill it while cooking? Im thinking that was to keep some moisture in the air right?

The pan of water is for moisture, we can get some pretty dry air here with these cold temps in parts of Canada.

I don't think you will have a problem keeping up by the looks of your food posts

I guess it makes sense if folks are shelling out money for Mak and Memphis grills they either like grilling a LOT or have quite a bit of discretionary income. It's good to see everything folks are doing with their grills though. Gives me ideas every day.

I flew over Regina on the way to Cold Lake several years ago. Luckily it was the summertime and I didn't have to endure the temps you're facing right now.
