Traeger temps

I am new to this forum having just purchased a Traeger pellet grill this week and did my first cook last night. I did a beer can chicken and it was just O.K. I have two Big Green Eggs and I'm used to cooking on them. I set the temp at 375 and the highest it would go was at about 343. I live in Wisconsin and the outside temp was about 43 degrees. Would this be the reason the temp would not go higher? If that's the case, hate to see what happens when it really gets cold here. Chicken was moist and had good taste but skin was not at all browned and crispy. Any suggestions.

First, welcome to the forum Chuter and congrats on your new Traeger. About your problem with the temp, if you want the best answer call Traeger customer service they know their product better than anyone. I wish you the best, good luck and good smoking.

Welcome to the forum, Chuter.

Which model Traeger and what type of controller?

This is a common complaint with folks who have the Traeger 3-position controller. I recently saw a Traeger Jr. with the Ortech controller and the guy was amazed at what a difference it made in what that grill could do.

Agree on checking the controller, but I think you also need to deal with the ambient temps. I've lived in Wisconsin (Janesville and Madison) and now live in Flagstaff, AZ at 7,000 feet, so I have had to and still do have to deal with low ambient temps. I now have a Yoder YS640 with their thermal jacket on it. It's very expensive, but cuts pellet usage significantly (which means it's holding temps much easier). I'll pass along a good, inexpensive suggestion I heard elsewhere: get yourself a welding blanket! Here's one example for $20+shipping. If you have Amazon Prime, they have one for about the same price. At 4' x 6', you can just drape it over your grill! There are eye grommets on it, if you need to secure it in windy conditions.

I would call customer service & get a thermal blanket also don't expect to ever get over 360 degrees on a traeger. My Lil Tex Elite would not climb over 360 on a 70 degree day even after Traeger sent many replacement parts.
