So, I am a big believer in the brining method used by Alton Brown for cooking a Boston Butt except I shoot for a 12+ hour soak ( I also do the entire cook on the grill at 225F). The first time I did this it came out with a rich natural flavor that everyone loved.

I ride motorcycles and knew that thing looked familiar. They are basically motorcycle baffles with a cover on the ends to hide the sharp edges. You can get twice the length for about 2/3 the cost. Only downside is you don't get the fancy end.

I picked up one of these little trays from Lowes and it fits great on the Pellet hopper on my Lil' Tex. It will hold up to 5 lbs and is perfect for keeping things like temp probes and rubs on hand.

First, I have never cooked a Brisket. So, I have a bit of a challenge. I get half a cow every year. The problem is that it is typically a smaller cow which I prefer because the steaks are more reasonably sized. But this leaves me with some very small Briskets. they are basically about 1 1/2...
So looking for a wireless meat and grill thermometer that won't cost an arm and a leg. Looking for opinions on the Maverick and the iGrill or comparable products.
I just read some not so great reviews about the iGrill that leave me a little concerned.

I just got a Traeger 070 Lil' Tex and replaced the three position controller with a Savannah Stoker II. So far I really like the Pellet Smokers since they provide awesome temp control and good smoke flavor.
Look forward to learning from the Pros hanging out on here.
