Basic Prime Rib

Had a bad Prime Rib experience at a restaurant this week and I wanted to make it right and cure the craving that I still had.

Here we go:

Nice little chunk of meat

Hit it with the Double Secret

Threw some veggies and beef broth in the bottom of the pan for Au Jus

On to the MAK running on high for an hour and then down to 250 until done (pellet boss handled this)

After about 4 hours

Pulled at an IT of 130

While the meats resting hit some grass with a little garlic olive oil and Desert Gold and then onto the flame zone running on high

Scooters Bananas

Needed a little desert after that Prime Rib so we gave Scooter's Bananas a whirl

Cooking for the office Part III

Pork butts, I cannot enter the office without pulled pork :)

I will also do some single serve food saver portions for my husband who will be cooking for himself while I'm gone (he will be eating like Squirt last week, only without the aid of pellets) ......

Four on very early this morning. this was later in the afternoon

Not cooking for the office ;)

after the pork butts were off, I carefully took the grate out, carefully pulled the nasty foil off the drip pan and cranked up the grill to 375

Next up - this cook was for me and Mr. Deb

let them cool a little, then added a little ice cream (if you use an ice cream scoop for the cookies they are just the right size to use for ice cream discs cut from a pint container)

plastic wrapped and into the freezer til after dinner, although I'm seriously debating eating mine for dinner :D

My first spatchcock chicken. When I first saw some spatchcock chicken here, I thought maybe it was a special, range free kind. Duh! This is rubbed with Yardbird with fresh rosemary under the skin.

Spinach was sauteed in olive oil and finished with a splash of Balsamic vinegar. The salad is a fresh red pear, dusted with cinnamon, topped with cottage cheese and lots of ground black pepper.

Ok, looking great so far! If five more chefs post a cook, BP has to reach even deeper into the prize vault. Believe me, we all want to see what's cooking! Every time I have judged this contest I've wished I could award a fourth place....could this be the week?

Tri Tip done with santa Maria style

Santa Maria seasoning over night on the Mak 235 till 115 then finished off and seared on flame zone after resting till reach 450 then finished til 142 went a little over the 135 mark
